The fact is, hydrolysis is a naturally occurring digestive process in humans and animals. In humans and animals, the protein is hydrolyzed quickly with the assistance of proteolytic enzymes found in our stomachs, trypsin and pepsin. However, industrial hydrolysis is quite different, and conducted by dropping the Wheat Protein in a vat of sulfuric acid for hours or days to reduce the protein’s molecular size. The longer a protein is hydrolyzed the further it is broken down, and at times the protein can be over processed, reducing it to just the amino acids found in protein.
